Ginger is a perennial herb from the Zingiberaceae family that can grow up to one meter in length and has thin-long leaves and root tubers. It grows in tropical or semi-tropical climates mainly in India, Indonesia, Vietnam, China (1). The ginger herb is used in Ayurveda, Chinese, Arabian, African, and many other traditional medicines to treat various diseases such as nausea, vomiting, and asthma (2). 

Ginger has been used as a therapeutic source in traditional medicine since ancient times. Many of the herbs used in traditional medicine contain some bioactive components that have a positive physiological effect on the human body. Some important bioactive components found in the structures of herbs include alkaloids, tannins, flavonoids and phenolic compounds (2). 

Ginger is a rich source of essential oils because it contains zingiberol, zingiberene, phellandrene and linalool. The tanginess of ginger is due to gingerol and shogaols (3). Gingerols and shogaols contibute to human health in terms of nutrition. Ginger's medicinal properties, including relieving nausea, arthritis, and pain, have been associated with gingerols and shogaols. The ginger herb has a range of biological activities, from anti-cancer, anti-oxidant, anti-microbial, anti-inflammatory and anti-allergic to various central nervous system activities (4). 

For thousands of years, scientists have used a wide variety of methods to benefit from the healing properties of herbs. EXTRACTs, obtained by the carbon dioxide supercritical fluid extraction method (SFE), which was developed to acquire bioactive components from herbs, make it possible to obtain almost all of the volatile bioactive components and other auxiliary active substances in herbs in a clean environment without oxidization. In the studies in the literature Zingiberene was acquired at 13.44 %, β‐Sesquiphellandrene at 5.85 %, Zingerone at 7.49 %, 6‐Shogaol at 6.30 %, 6‐Gingerol at 1.09 %, whereas in Minerelax ginger extract, Zingiberene is 20.31 %, β‐Sesquiphellandrene is 11.79 %, Zingerone is 1.83 %, 6‐Shogaol is 7.97 %, 6‐Gingerol is 0.35 % (5). 

The extracts obtained by the SFE method are high-quality products that have not been oxidized and do not contain chemicals, together with their extensive effect on health.
